A fascinating, micro-oxidized sencha from Saitama, Japan. Yumewakaba is a recently created cultivar. This deep steamed sencha undergoes an intentional withering prior to processing. The freshly picked leaves are exposed to UV light, which accelerates the withering process. This step is controlled to allow the floral undertones to blossom while still allowing the rich, umami profile to be shine through.
