OOLONG teas are a classification of teas that are the most difficult to make. Typical oxidation ranges from 10% to 60%. This creates a wide variety of flavor profiles that go from green/floral to dark/roasted with many variations in between. Oolongs are best enjoyed through traditional gongfu-style brewing, with the tea being tasted
after multiple quick infusions.
